Thermomix Chicken and Tomato Risottto

Thermomix Chicken and Tomato Risotto Recipe


Ingredients:  Thermomix Chicken and Tomato Risotto
1 red onion
2 garlic cloves
40g coconut oil (or olive oil)
320g Arborio rice
2tbs stock paste (a thermie basic....or 800ml stock)
500g chicken, diced
 800g water (if using stock paste)
2 tomatoes, diced
1 zucchini, diced
2 sprigs basil, finely chopped
1/4 Parmesan cheese, grated


1. Add red onion and 2 garlic cloves into bowl - process 5 sec/speed 5
2. Scrape down the sides, then add the oil. Sauté 3 min/120 degrees/speed 1
3. Insert butterfly whisk, the add Arborio rice. Mix 1 min/120 degrees/speed1.5 with no measuring cup in the lid
4. Add stock paste, chicken, tomatoes and cook 15mins/100 degrees/1.5 reverse with simmering basket on top
5. While that's cooking..... put zucchini, basil and Parmesan in the Thermoserve.
6. When risotto is finished cooking, pour into Thermoserve and mix everything together. Put on lid and stand for 5-10 mins (will thicken on standing).
7. Serve with extra Parmesan :)
