Spinach Pie with Puff Pastry for the Thermomix


Spinach Pie is always a favourite at our house despite the kids have no idea who Popeye is.  Full of goodness and wrapped in a delicious puff it will be a favourite at your place too.

Thermomix Spinach Pie

I used the Thermomix 'Quick Puff Pastry' recipe but didn't do all the steps.


This is what I did....
1. Combine 200g butter (cut in small pieces), 200g plain flour, 90g chilled water and1/2 tsp salt in bowl. Mix 20sec/speed 6
2. Transfer onto a lightly floured surface and work into a ball. Wrap in glad wrap and put in fridge for 20min.

Preheat oven to 200 degrees fan forced.


Meanwhile - make inside of pie
1. Roughly chop 1 bunch of silverbeet then put in thermie bowl with one onion and 2 garlic cloves. Chop finely in thermomix bowl - 8 secs/speed 5. Then scrape down and repeat.
2. Add 5 eggs and 1 cup grated cheese, and mix 10 secs/reverse/speed 2 - or until combined.

3. Lightly grease your baking dish with oil (i used a 22cm square dish)
4. Take pastry from the fridge and roll out to fit your baking dish - with overhang
5. Fit pastry into the baking dish, spread the filling over the pastry then fold the pastry edges back over the pie to create the top. (Could do the top of the pie separately but I didn't have enough pastry for that).

6. Brush the top of the pie lightly with oil (or use spray oil - that's what I used), and bake for 35-40mins until golden.
