Entertaining at its simplest

These Walnut Palmiers are so easy to make and are such a delicious treat.  Perfect when you need a quick plate for guests.

 Walnut Palimers Recipe


2 sheets frozen puff pastry

1 1/4  cups of Walnuts

2 tablespoons brown sugar

2 teaspoons cinnamon

Baking or Oil Spray.



Preheat oven 200 degrees Celsius fan forced.

Line with baking paper a baking tray or two pending on your tray sizes.

Remove Puff pastry from freezer and set aside.

Now you'll need to crush your walnuts.  I used my Breville Boss To Go Plus but you can use a food processor. In the Boss to go fill walnuts to the Max line in the milling cup. Blitz for a few seconds only and check. You want a fine crush not a paste, should take less than five seconds for the right consistency.

Spread your crushed walnuts over your pastry sheets evenly with the back of a spoon lightly pressing in as you go.

Over each sheet sprinkle a tablespoon of brown sugar. You can add more if you like, i like just a touch of sweetness.

Dust over the cinnamon.


Now you're ready to roll!

Take one edge and roll it in as tight as possible.  Roll over till you are almost in the middle then turn the sheet around and do the same so the sides are evenly rolled.

Now roll each side till the meet in the middle.

Roll it together so its nice and tight and place the rolls face down.

Use a sharp knife and cut into slices about 3mm thick.  Try and keep them all even. 


Using a Rolling pin or you can use your thumbs just as well gently press them flat.  Keep them even and dont roll to far or they'll fall apart just a couple of gentle rolls of the pin.

Lay out on your baking tray and spray with oil.

Bake for approx 20mins. 


Best eaten on the day, keep in an airtight container.   Don't refrigerate. 

Will make approx 48.
