The pizza thats perfect for a lunch box!

 

My son always asks to take pizza for lunch as school but i just think its so awkward and all the bits will fall off. It also wont fit in the lunch box properly and one little slice of pizza isn't enough for his lunch. 

These are basically a crispy pizza made into a round so the bits wont fall out!

Lunch Box Pizza Scrolls

Ingredientslunchbox pizza scrolls

base:

1 cup Greek yoghurt

1 cup All purpose flour

extra flour for dusting

 

Toppings:

Use what suits you of course.

We used:

cheese

bacon

mushroom

capsicum

paprika

 

Method

Mix the dough all together in large bowl, you may need some extra flour it really depends on your yoghurt.

Roll the dough on a floured surface in a long rectangular shape. Have it so there is a wide edge facing you.

You need it to be pretty even in thickness so it cooks evenly.

Spread over your toppings evenly. Go with the less is more theory, if they are too full the dough in the middle may not cook through.

Roll the dough up. Roll it length ways away from you. 

When you get to the end turn it so the edge is facing down on your surface.

Slice with a sharp knife thin rounds, i work with 1cm wide. Make them as even as possible.

Lay out on a baking tray. I always line my trays with baking paper but you can spray if you like.

Bake in a moderate to high heat (180c / 356f )  for approximately 15 minutes depending on your oven. 

We get about 26 - 30 pizza scrolls,  and they dont last long!
