weet-bix gluten free cookies 

Gluten Free Weet-Bix make these tasty morsels

 

These are a yummy after school snack made with Gluten Free Weet-Bix and Almond Flour. Delicious!

Even better have the kids help you make them.  My two yr old loved drizzling icing on these.

Weet-Bix Gluten Free Cookies

Ingredients

5 Weet-Bix crushed

1 cup Almond Meal

1 tbsp Cocoa

1 tbsp Chia Seeds

30gms Almond flakes

2 tbsp Brown Sugar

1/2 cup Desiccated Coconut

5 Tbsp hot water

100gms Butter

Icing

3/4 cup Icing Sugar

2 tbs Cocoa Powder

2 tbs hot water

1 tbsp Coconut Flakes

 

Method

Mix together the dry ingredients

Melt butter and add to dry mix stir in well

Add the hot water and stir in well.

Leave to rest a few mins so the chia soften and help bind

Using hands make balls about tablespoon size and squish them together so they bind.

Gently flatten a little as you put on tray

Bake 10 - 15mins at 160 degrees Celsius fan forced

Allow to cool completely before icing.

Icing: mix together icing sugar and cocoa slowly add in hot water and mix thoroughly. Once iced top with coconut Flakes
