Spinach and White Castello Quiche

Ingredients

5 eggs

1/2 cup Milk

175g Spinach i used the frozen boxed one.*

1/3cup grated tasty cheese

80g White Castello sliced then roughly chopped.

1 tblsp chopped Chives

1 tblsp chopped Parsley

1 large tomato sliced

1 sheet Shortcrust Pastry. I used the frozen sheet pastry.

*you can use Fresh Baby Spinach instead just chopping it roughly.

Method

1. Preheat oven at 170 degrees.  Pre bake the base for about ten minutes. you want a change in colour but no browning at all.

2. In a bowl whisk lightly the five Eggs.  

3. Stir in the Milk, Chives Parsley and Tasty cheese.

4. If using Spinach that was frozen (like me) you'll want to drain it really well. squeeze as much moisture out as possible then stir it in to egg mix.

    If using fresh just chop it up and stir it in.

5. Pour the egg as Spinach mix into the shell carefully and check that its all pretty evenly distributed.  

6. Place over the top all the pieces of Castello pushing them in slightly but leaving them fairly exposed on top.

7. Arrange the tomato slices evenly around the top.

The quiche is ready once the middle has set through, Cheese is golden on top and you can cut it and it holds shape.  Yum :) 8. Bake at 170 degrees celcius for approx 40mins.
