Lemon Marmalade Slice 

Delicious Lemon and Marmalade Slice

Lemon and Marmalade Slice

Ingredients

  • 1/2 cup sweetened condensed milk
  • 100g butter
  • 250g milk arrowroot biscuits
  • 1 teaspoon grated lemon zest
  • 1 cup coconut 
  • 2 Tablespoons Marmalade

 Icing

  •  1 3/4cups icing sugar
  •  3 tablespoons lemon juice
  •  15g soft butter
  •  2 Tablespoons of Marmalade for spreading on icing.

 

Line a lamington tin or rectangle slice tin with baking paper. Give yourself a bit of an overhang so you can lift the slice out easily.

In a small bowl melt the butter and then stir into the Condensed milk, stir until well combined.

Using a food processor, process biscuits until you have fine crumbs. 

Transfer the crumbs into a large bowl. Add coconut and lemon zest . Stir to combine.

Add the warm butter mixture mix well.

Press mixture over the base of prepared pan. Pressing down it down firmly.

Cover and refrigerate for 1 hour or until firm.

Remove and spread over the biscuit base two tablespoons of Marmalade. Thinly but nice and evenly.

To make the lemon icing: Sift icing sugar into a bowl. Add very soft butter and lemon juice. Stir continuously until smooth and combined.

Spread the icing quickly over the slice.

Now moving fairly fast still, gently dollop your Marmalade on the icing and quickly spread over.

Leave to rest until icing has set.
